The
Aceto balsamico vinegar is the absolute star from all the various
vinegars. The maturing process alone, takes between 12 and 40
years. The longer the vinegar is left to mature the thicker and
naturally more expensive the finished vinegar will be.
The vinegar is produced from white trebbiano
grapes which are stored in big cherry or oak wood casks. As the
years proceed the vinegar becomes thicker and darker in colour.
Be careful with this vinegar, use it sparingly, or it’s
strong, sweet taste will drown the taste of every salad. Real
balsamico vinegar isn’t cheap, in extreme cases it can cost
as much as 100 euro per bottle.
