Even
those of us who don’t have a sweet tooth will normally always
have a cake they will enjoy. From a light fruit cake to a rich one
with plenty of alcohol to preserve it for many months eg. Christmas
cake, Easter cake and wedding cake. A lovely chocolate cream cake,
a cheese cake, victoria cake sandwiched together with jam and cream,
apple cake, banana cake, swiss roll, eccles cakes, scones etc. etc.
etc. And from every cake their will often be many different recipes,
take a simple chocolate cake, who would ever think of making one
with mayonnaise instead of margarine, it’s delicious, you
will find the recipe in our recipe files.
The preperation and ingredients of cakes can
differ immensely depending on the cake, for example a swiss roll
has no fat, the eggs are whisked to incorporate as much air as
possible. Some cakes have a higher propotion of flour than others,
some cakes are made with plain flour others need extra baking
powder added to self raising flour.
Gateaux tend to be more fancy, more trouble is taken on the presentation,
and they will often be served after a special dinner, or when
trying to impress!
