The
most common use of yeast pastry is for pizzas, but the much loved
doughnut also has yeast in the mixture. Many cakes, such as plum,
which is baked on a flat bakng tray, have a yeast pastry as the
bottom of the cake which is then covered with cut plums and a
little cinammon sugar. White flour is generally used for these
recipes as it makes a softer base than many darker flours.
Fresh or dried yeast can be used, fresh yeast
has to be mixed to a creamy liquid with some of the milk or water
used in the recipe, for dried yeast, the instructions should be
followed from the packet.
As with all yeast recipes, the dough has to be left in a warm
place to rise, this takes at least half an hour, usually longer.
